A simple, fuss-free traybake combining sausages, colourful peppers, red onion, cherry tomatoes, and gnocchi, all tossed in olive oil and herbs. Everything goes in one tray and roasts together at 200°C for 25–30 minutes.

Ingredients

6 sausages
1 red pepper
1 green pepper (or a small courgette)
1 red onion
1 pack of fresh gnocchi (500g)
generous handful of cherry tomatoes, quartered
couple of cloves of garlic, squashed/bruised
salt & pepper
big glug of extra virgin olive oil
dried Italian herbs or fresh basil

Method

1. Chop each sausage into four equal pieces and put into a large mixing bowl
2. Chop all the veg that you’re using into similar size pieces and add to the mixing bowl
3. Peel and squash the garlic cloves and add to bowl. Add as much or as little of the Italian mixed herbs (if using), salt and pepper, and then add the extra-virgin olive oil and mix well together.
4. line a large baking tray with greaseproof paper (it just protects the pain!) And tipping the contents of the bowl and spread out evenly.
5. Bake in a 200C fan oven for a minimum of 25 minutes, but if you like your sausages a little more crispy, it will be closer to 30 minutes.
6. When everything is done, take out the oven and scatter over some fresh basil (if using). Enjoy!

Additional information

If you like mozzarella, halfway through cooking scatter some drained mozzarella pearls in the pan, or if you can’t get those, tear up a ball of mozzarella and scatter over.
