From time to time, an animal may present itself that I consider to be of truly exceptional quality.

There will be no timetable for this. No promised monthly release, no guaranteed numbers and absolutely no suggestion that another will follow shortly afterwards.

The Chambers Collection exists only when an animal genuinely earns its place within it.

When one stands out sufficiently, I reserve the right to remove it from the usual course of proceedings and place it into the private custody of the Chambers.

There, it will be allowed to mature properly, with the beef hung for 21–28 days before being prepared into a very limited selection of premium cuts, whole joints or complete beef boxes.

This is not simply another range that will always be available. Another Chambers Collection may appear soon. Equally, I may see nothing worthy of my attention for some considerable time.

The decision rests entirely with me. If an animal catches my eye, I retain the right to reserve it.
