Mature beef is something quite different. With age comes a deeper, fuller flavour, and when the right animal is selected and given time to mature properly, the result is beef with real richness and character. Typically, in this country, we slaughter our cattle at no later than 22 months. But in parts of Spain, France and to a lesser extent, Italy too, some cattle are left to mature on the field for up to seventeen years. And these cows (known as rubia gallega or vaca vieja) are considered a real treat - rich, deeply flavoured and speckled with creamy fat.

You can expect a mix of premium steaks, diced beef, mince beef and joints in each box, and each box will weigh approximately 5-6kgs.

This month, I have selected a 40 month old Jersey x Simmental, reared naturally out at grass before being brought inside for her final three weeks to finish. The beef will then be hung for 21-28 days, allowing that mature flavour to develop further and the meat to tenderise beautifully.

It is a more indulgent style of beef, a carefully chosen animal. A slower, more considered process. And a limited amount of beef that I am prepared to put my name to. Naturally, standards at this level require somebody suitably discerning to oversee matters.

Fortunately they have me.

  • Provenance

This beef comes from a Jersey x Simmental cow, chosen for the qualities both breeds bring to the table.

Jersey beef is know for its fine texture, natural marbling and rich flavour, while the Simmental adds shape, muscle and substance.

Age adds another layer. Mature beef develops a deeper, fuller and more complex flavour than younger beef, particularly where the animal has had more time to lay down good quality fat.

Not every older animal makes exceptional beef, which is why this one has been selected individually. Older beef, chosen because it is worth doing properly.

  • What's in the box?

Every box is a proper mix of premium steaks, roasting joints and everyday cuts. You won't just get a box of mince and hope. The exact quantities vary by box size, but the balance stays the same: the good stuff, and plenty of it.

Good to know

Why buy from us?

You could buy beef at the supermarket. Nothing wrong with that. But if you'd like to know exactly where your meat came from, support a real British family farm, and eat something that was raised with a bit more care and a lot more personality, here's what you get with us:

  • Fully traceable from farm to fork
  • Directly supporting a British family farm
  • Small batch, produced once a month
  • Premium quality beef with no fillers, no added water, just beef
  • High welfare standards throughout
  • All our beef is dry-hung for 21-28 days
  • Delivered vacuum packed, direct to your door via APC Overnight

Just beef. No added water, no fillers, no mystery. British beef, professionally butchered and delivered direct from the farm. That's it.

Why the wait

We produce beef boxes once a month, so depending on when you order, there may be a few weeks' wait while your animal is processed, hung, butchered and packed. We think that's a feature, not a flaw.

This isn't warehouse stock. Each batch is produced specifically for the people who've ordered it. Your beef hasn't been sitting in a freezer at a distribution centre since January.

Delivery information

Professionally butchered, vacuum packed and delivered via APC Overnight.

At this time, we are only offering delivery to mainland UK only.

Welfare & Processing

All our cattle are processed using a full-stun system. No religious slaughter takes place at the abattoir we work with. Animal welfare matters to us from day one on the farm right through to the end of the process, and we won't compromise on that.
